Our new addiction: Korean pancakes!

I first tasted these when my cousin’s wife made them. They were wonderful little pancakes jammed with vegetables and shrimp and dipped in a sauce she made from soy sauce, white vinegar, garlic, chopped scallion. red pepper flakes, and a dash of sugar.
The pancakes themselves are made from a mix you can buy in your local Asian grocery (it will say Korean pancake mix in English). Make the batter, which takes about a minute, and throw in chopped leftover veggies and shrimp or meat. They are so good and easy, and my son who will not eat cooked broccoli or carrot was gobbling them up—with broccoli and carrot in them.

Plus, the highly addictive sauce has a soy sauce base, which I know is also a no-no. Here’s my evil plan: let’s meet for a weekend and go out for every meal, eating all the forbidden foods we want!

I’ll get a ruler and a map…with our luck it would be some one-horse town with only a farm stand and no ethnic restaurants…
